I’m a big fan of salads that have so much stuff in them, you forget  they are salads. Cue this lemon and herb Mediterranean salad, with big, luscious chunks of avocado, romaine, bell peppers, and more. Do you need a new dessert in your repertoire that is easy and not the typical pie or cake? Then you need to meet the frozen peanut butter cup pie, which is vegan and gluten free – but could also be adapted for regular diets. If you love chocolate and peanut butter together (And I definitely do!) And hey, you could make it super easy and even by a graham crust, and save a bit of time.     Thank you Julie. This last pin is comforting. And yes, being near water is fantastic, I’m so glad to live a bit closer to the seaside now, even if it means driving for an hour. A wide expanse of blue does wonders for the soul.
