Loads of bright veggies and protein, this is a great (quick!) dinner for anyone looking to cut down on carbs or eat more veggies. Asparagus, sweet potato and chicken come together beautifully in this dish, and if you feel like you want to add some carbs (no judgement), grab yourself a flatbread and toss this stuff inside. Do you love everything wrapped in pastry, just like me? There is a cafe near me that makes these amazing spinach and artichoke hand pies, and if they made a sweet version like these epic blueberry ones, I would never leave. Ever. Fortunately, you can make these at home (and also never leave, if you felt that way inclined). You can make the pastry from scratch like in the recipe, or you can buy frozen butter pastry sheets, like I do. Because Anything that gets me to a hand pie faster is tops in my book. I’m crazy about just plunking down food on platters instead of making a big meal, and this fruit platter looks like like heaven for the hot summer we’ve been having.
