This enchilada skillet is a great dinner for when you don’t want to eat healthy but still need to get some veggies into you. I especially love how in this form, you could either put some of it in a wrap, or in a lettuce wrap, or just eat it like a seven layer dip with tortilla ships, I’m not here to judge. These black bean brownies are so fudgy, gooey and deliciously decadent, you’ll be thrilled that they have beans in the because then they are high in fibre, so basically they are healthy, beans are a vegetable, right? Yeah, totally healthy. Or at least, way healthier than a typical brownie. AND – they don’t have a lot of ingredients, which helps these come together easy-peasy. A far more refreshing choice than lemonade, limeade is one of my faves! This is a great recipe for a refreshing pitcher of limeade, made with only three ingredients. I really recommend, ice cold limeade on a hot day….. Mmmmmm. Pinterest link is here, and the recipe is here.

I love this cute and cheery bright crocheted basket, and the fact that it is taller than the usual patterns you see, making it a little more multifunctional for different items. The trick is to crochet with a smaller hook than the yarn calls for, to ensure that the fabric is stiff enough to stand up, especially as you get taller with the shape! Have a gorgeous weekend, everyone. Here in Toronto, things are just starting to open up across the province, after a very loooong shutdown. It feels very surreal! I’m not in a big rush to be around a lot of people, but it’s so reassuring to see the infection numbers going down, and the vaccine numbers going up. Feels like a really promising summer.
