It is not often that I bust out a new recipe, but lately cocktail creativity has gone into overdrive. This is a “healthy” Pina colada. It’s basically a boozy fruit smoothie, with no added sugar or that weird, chemical-laden artificial mix. I make it without alcohol first, give some to the kids, then make the adult version. 😉

Ingredients:
– 2 cups chopped pineapple (fresh or frozen)
– 2 bananas (fresh or frozen)
– 2 cups unsweetened almond milk
– 1 tsp vanilla
– 1 tsp coconut extract
– 4 shots Malibu coconut rum (optional, I guess?!)

How to:
Put all the above into a blender, and blend until smooth. Pour into glasses and get your tropical staycation on! 🍹🏖️☀️🍍

A couple notes: if neither the pineapple or bananas are frozen, chuck a few ice cubes in there. Personally, I have an ongoing bag of frozen bananas in my freezer at all times, it serves my blender-based lifestyle. Makes 4 servings.
