These snickerdoodle apple pie bites are such a great combination for the perfect cookie to go with apple pie! The snickerdoodle cookie base, all that cinnamon-y goodness, is the perfect little base for an apple pie bite- much better than a lot of pastries, for sure. This weekend I’m so surprised that it’s coming up to the middle of December! How is this month going so quickly? I’m hoping to do some holiday baking with the kids, and maybe we’ll take them out after dark to see some lights.
