An easy, fast weeknight pasta dish is always a hit in my books! This wonderful pasta with lemon and arugula is cheesy and so satisfying- and if you were looking for a good meatless dinner idea, this is a great one! I find my kids are not so keen on arugula, so I switch it out for spinach, and save the spices for the grown up’s bowls instead. Pinterest link is here, and the full recipe can be found here.

With only 3 ingredients and a recipe that makes about 15 truffles, this is a really quick, really easy one to have on hand. Perfect for when you just want to make a small amount of truffles, not have truffles for a party’s worth of people.
