Zucchini oatmeal chocolate chip cookies! I get to eat way more of them because there are vegetables in them, right??? The recipe declares them gluten-free, but that is because the recipe calls for gluten-free flour- I’m confident regular flour works just fine, if you are good with gluten. Gnocchi with Pomodoro sauce is one of those great comfort foods that is just perfect for this time of year, and the recipe comes together easily. If you are in a rush for a weekday meal, skip the step with broiling the cheese for a crusty top- the recipe is still delicious without it, but it does add any extra tasty element.
