Chicken Quinoa Enchilada Muffins – because everything is tastier when it’s made in a muffin tin! High and protein and surprisingly easy to make, and are perfect for freeing as well. You know how much I love coconut, and chocolate! So no surprise, I’m a big almond joy cookie fan. These cookies only have 4 ingredients and come together in a snap – sure to please any coconut lovers out there. Pinterest link is here, and the full recipe can be found here.

Falling down the rabbit hole of all the free embroidery patterns on DMC, I met this charming cat and I’m so smitten. I also think this would be awesome as a ginger cat! Sometimes it’s a huge help to read a list of tips and tricks for baking. I’ve been baking forever, but there were still some things in here that I didn’t know about – particularly #4, #17, and #22.
