I’m dying to try this recipe, but haven’t been able to get to a grocery store this week to get some chicken to try it- pickle brine chicken fingers! The idea is that you cut up some chicken breast into ‘fingers’, brine them for 8 hours in the fridge in some pickle juice, then batter and bake. I was blown away by this cupcake tutorial- what a beautiful idea for a birthday or mother’s day! I’m a bit lazy and I strongly suspect that if you are careful, you could maybe pull it off with store-bought mini cupcakes. But I haven’t attempted it…. yet. This decaf blueberry tea latte is made with frozen blue berries and rooibos tea, and looks so indulgent! If you are like me and already have a bag of mixed frozen berries in your freezer all the time for smoothies, then you can just pick out the frozen blueberries for this (and get some rooibos tea, if you don’t already have some).
