I’m a huge fan of fritters in all forms, and these veggie ones are great for getting your veggies in when really, you just want to eat fries. They don’t require a lot of ingredients, and if you have a food processor, this will be super fast- because then you can shred all your veggies in there, instead of by hand with a shredder. Perfect for a quick, veggie-filled dinner. Or snack. Or side dish! The really easy recipe is right over here.

5 ingredient oreo cheesecake cookies?! Yes please! Baking is totally magic, because with oreos, cream cheese, flour, sugar, and butter; these come together lightening quick. Find the recipe right here. And I know some of you are gluten intolerant like I am- but fortunately there are gluten free oreos now, so these can easily be modified – substitute gluten-free oreos and flour, and big bang boom- you’ve got oreo cookies!!

I love Knitty, I learned so many new techniques (and I also designed patterns for them in the past – Velvet Morning, and the Make Up Your Mind Tank!). If you saw my instagram post today, you’ll know that I’ve been very focused this week on my sick cat, Yarn. Please send healing thoughts her way, she is a sweet kitty! Our weekend will be pretty low key, because someone has to be with her most of the time, to make sure she isn’t trying to go up or down the stairs, or jump on anything. Wishing you a healthy, relaxing weekend – and if you have pets, give them an extra snuggle from me.
