Easy Easter Hot Chocolate Recipe

If my Instagram feed is to be believed, many of you are already experiencing actual, full-fledged spring where green things are growing and flowers are blooming. I can’t quite get my head around that yet– it was -9 Celsius here today (more than a bit below freezing, for those on Fahrenheit). I’m told it’s only going to last another couple of days, but I’m still hunkered down with hot beverages, trying to stay warm. Which brings me to this very easy Easter hot chocolate recipe.

So- hot chocolate is pretty awesome, I think we can agree on that. This is a really easy recipe that doesn’t have any powdery stuff- it’s entirely possible to make this delicious hot chocolate with just milk and chocolate chips alone, but a dash of vanilla and a bit of instant coffee add depth and richness to the flavour, unless you happen to be using fancypants gourmet chocolate. In which case, you do what you’ve got to do and savour it in a simpler form. You can substitute bar chocolate for the chips, you’ll just need to chop it up first.

What makes this Easter-y is the peeps. We are all totally comfortable with putting marshmallows on top of our hot chocolate, so how fun would it be to put a charming marshmallow peep or two on top of yours? pretty damn fun, let me tell you. And did I mention how easy it is? So very easy that it fits on a little recipe card.

I basically spent my weekend testing the recipe until perfect and making the recipe card (also had a bit of a sugar coma after eating a lot of peeps, for research purposes).     I do love hot chocolate….but I have a pure hatred for Peeps. I don’t know why but I’ve just never really liked them. When I’d get them for Easter, I’d give them to my mom (she loved them)……and when I found out about the Easter Bunny, I realized my mom kept buying the Peeps for herself and just used me as an excuse 🙂

    Congratulations on developing new skills! Beautiful pictures, and this recipe card is lovely. I know how you feel, we had -26 yesterday morning in Montreal (wind chill included). It is slowly warming up, but hot drinks all day long are a great help to endure.

    anyway, yeah it’s still winterish here. We got 5″ of snow yesterday and it was a COLD bike ride to work this morning. My kids requested hot chocolate after school and I had to oblige 🙂
    Speaking of Peeps, my kids’ school had science night this evening and my son’s class project was to dissolve Peeps in different liquids and observe which solvent worked the fastest: water, coca-cola, vinegar, laundry detergent, or apple juice. (In case you were wondering, laundry detergent was the winner!)

    We make something very similar but use Kahlua instead of the instant coffee, at least when we’re drinking in the evening. Also, a quick way to do this by the mug is to warm up the milk in your mug in the microwave, add a handful of chocolate chips when the milk is hot, and then put a wire whisk in your mug and then rub the palms of your hand together back and forth with the whisk handle in the middle – whips the chocolate right up, the chips melt in the hot milk, and bob’s your uncle. Add flavorings & Peeps, I guess — the Peeps part is new to me and very adorable. Happy Easter & may spring come to you quickly!

    excellent recipe! its a shame we don’t have peeps in the UK, but when I make this hot chocolate I’ll be sure to use some colourful marshmallows still and perhaps call it a spring hot chocolate in my house 🙂 its very cold here too, nothing quite like -9c but enough that I still need 2 scarves and a pair of gloves on my way to work. We even had snow one county over this morning! spring is on its way…right? jenny xx

    Even in Philadelphia we are still hunkering down with hot beverages. Not a sprig of green to be seen anywhere yet, so hot chocolate seems like the beverage for Easter!
